INGREDIENTS
- 1 cup Red Lentils
- 4 cups Vegetable Broth
- 1 zucchini chopped
- 2 carrots chopped
- 1 cup yellow onion chopped
- 1 tsp thyme
- 1 tsp basil
- 1 tbsp tomato paste
- 2 Cloves garlic chopped
- 1 tsp whole black peppercorns
- 1/2 cup white beans
- 1 tomato chopped
INSTRUCTIONS
- Water-sauté tomato, vegetables and herbs for 2-3 mins.
- Add lentils, beans, and vegetable broth
- Simmer for 25 minutes or until lentils are tender
- Stir in tomato paste and return to simmer
- Serve hot.
- Salt may be added to this soup once it's on your plate.
RECIPE NOTES
This is one of those extra special recipes because (If you're doing Eat to Live), it's unlimited. Beans, lentils, and plenty of veggies. And you can add more! Add whatever you like... It's called "Uber Veggie..." for a reason!
