INGREDIENTS
- Grilled Veggie Mix
- 1 cups Black beans
- 1 cup frozen corn
- 1 cup Frozen Fajita Veggies (fresh is fine too. Should include onion and bell peppers)
- 1 cup mushrooms
- Spice Mix
- 1/2 teaspoon Nutritional yeast
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon Cumin
- dash cayenne powder
- Cashew Mayo
- 1/4 cup Cashews
- 1 tablespoons lemon (juice)
- 2 tablespoons coconut milk
- 1/4 teaspoon Apple Cider Vinegar
- Toppers
- 1/2 cup green onion
- 2 cups spinach chopped
- Brown Rice
- 3/4 cup brown rice
INSTRUCTIONS
- In a heated pan, water-sauté veggie/bean/corn mix with spices mix until onions have browned slightly. May be sautéd in vegetable broth to add flavor.
- Serve mixture over 3/4 cup brown rice with fresh spinach, green onion, and topped with cashew mayo.
