Here's another super simple little number that's sure to knock your socks off. I really love it and sometimes cheat by purchasing the quinoa/rice mixtures at Costco. It's what I call Nutritarian Fast Food. Real deal. Hope you love it, and make sure to comment it you do!
INGREDIENTS
- 1/2 cups Quinoa (cooked)
- 1/2 cups brown rice (cooked)
- 1/2 yellow onion
- 1/2 cup frozen pineapple chopped small
- 1/2 cup mushrooms chopped small
- 1/2 cup kale chopped
- 2 tablespoons liquid aminos
- 1 tablespoon sunflower seeds
- 1 Cloves garlic
- 2 cups Vegetable Broth
- 1 teaspoon Garlic Powder
INSTRUCTIONS
- Cook brown rice and quinoa together with garlic powder and vegetable broth instead of water, otherwise according to package directions (I use a rice cooker)
- In a heated pan, water sauté onion, chopped pineapple, mushrooms, kale, and chopped garlic until fragrant and onions are tender and small mushroom pieces have become dark and tender
- Once veggies are fully cooked, stir in cooked brown 1 cup rice/quinoa mixture
- Stir in liquid aminos and sunflower seeds
- serve hot!
