This Kale Salad recipe is the perfect balance of textures with chickpeas, brown rice, and peppers. You can add sliced almonds to it too. If lemon juice isn't quite enough flavor, try this with the Fresh Cumin Dressing instead. Mmmm...
INGREDIENTS
- 0.25 tsp red pepper
- 1/2 cup Lemons juiced
- 1 can 15oz Cooked garbanzo beans drained and rinsed
- 1/2 cup fresh basil (loosely packed)
- 1/2 tsp Garlic Powder
- 1/2 tsp Dried thyme
- 2 cup kale or Few Handfuls Kale Sliced Thin
- 1/2 cup red pepper sliced thin
- 1 cup Cooked Brown Rice
- Sliced Jalapeño (optional)
- Sesame Seeds (optional)
INSTRUCTIONS
- Mix ingredients Serve in bowls and top with sesame seeds. Eat as is or toss with your favorite dressing. Enjoy!
