This delicious vegan salad is great with just the lemon juice. However, if you would rather pair it with a dressing, the Fresh Cumin Dressing tastes great with it too!
- 0.5 Avocado
- Cherry Tomatoes
- 1 cup cucumber Chopped
- 1 green onion Chopped
- 1/2 cup loose leaf spinach (kale works too)
- 1 cup Cooked quinoa
- 1 Lemons juiced
- Chop all vegetables and serve over quinoa.
- Pour lemon juice over vegetables before serving. Delish.
