INGREDIENTS
- 2 Red potatoes Large
- 2 teaspoon fresh herbs of your choice (rosemary, thyme, and oregano are my favorite)
- 1/4 teaspoon black pepper
- 1/2 teaspoon Garlic Powder
INSTRUCTIONS
- Heat oven to 400 degrees.
- Line pan with parchment paper
- Cut potatoes into equal-sized pieces, around an inch long and thick
- Place potatoes on baking sheet and sprinkle with garlic powder and herbs. Toss until seasonings are distributed evenly.
- Place in the oven for 40 minutes - turning half way through to ensure that all sides brown.
- Remove from oven and taste - adjust seasonings if necessary. Salt may be used once served.
- Potatoes may be eaten as is, but they're delicious with Creamy Citrus Dressing drizzled over the top. See recipe in Toppers/Dressings.
RECIPE NOTES
These oil-free roasted garlic potatoes are amazing just on their own. But drizzle a bit of the creamy citrus dressing on them and they are just divine. Did I say drizzle? I think meant to type "smother." They're vegan. They're gluten free. They're nutritarian. They're delicious.
