Hearty, flavorful soups are going to be your SAVING GRACE as you start a nutritarian diet.  The soups here are filling, delicious, and packed with nutrients - everything you need to combat that nasty hunger monster.   If you're a fan of curry, you're in luck with this lentil cauliflower soup.  SO GOOD.



  1. In a large soup pot, water sauté onion and potato over medium heat for 5-10 minutes.
  2. Add garlic, ginger, curry powder, coriander, and cumin. (Add 1 -2 T water if needed)
  3. Add lentils and broth. Bring to a boil, reduce heat to simmer, cover, and cook for 10 minutes.
  4. Add cauliflower. . Bring back to boil, lower heat to simmer, cover, and cook for 20-25 minutes, until vegetables are soft.
  5. Turn off heat and let soup cool down.
  6. Coarsely process soup through blender.
  7. Gently reheat soup over medium heat until it begins to boil. Add spinach, lower heat to simmer, cover, and cook for 5-10 minutes.
