Hearty, flavorful soups are going to be your SAVING GRACE as you start a nutritarian diet. The soups here are filling, delicious, and packed with nutrients - everything you need to combat that nasty hunger monster. If you're a fan of curry, you're in luck with this lentil cauliflower soup. SO GOOD.
INGREDIENTS
- 1 yellow onion small, diced
- 3 Cloves garlic minced
- 1 tbsp ginger Minced peeled
- 1 tbsp Curry powder
- 1 tsp Ground coriander
- 1 tsp Ground cumin
- 1 cup Uncooked red lentils rinsed and drained
- 1 Cauliflower chopped into bite-size florets
- 1 Red potatoes chopped
- 2 loose leaf spinach two handfuls
- 1 tsp ground black pepper
- 6 cups Vegetable Broth
INSTRUCTIONS
- In a large soup pot, water sauté onion and potato over medium heat for 5-10 minutes.
- Add garlic, ginger, curry powder, coriander, and cumin. (Add 1 -2 T water if needed)
- Add lentils and broth. Bring to a boil, reduce heat to simmer, cover, and cook for 10 minutes.
- Add cauliflower. . Bring back to boil, lower heat to simmer, cover, and cook for 20-25 minutes, until vegetables are soft.
- Turn off heat and let soup cool down.
- Coarsely process soup through blender.
- Gently reheat soup over medium heat until it begins to boil. Add spinach, lower heat to simmer, cover, and cook for 5-10 minutes.
