INGREDIENTS
- 1/2 cup Quinoa cooked
- 1 tomato chopped
- 1 cucumber chopped
- 1/2 cup green onion
- 2 tbsp. cranberries
- 2 cups loose leaf spinach
INSTRUCTIONS
- Prepare quinoa according to package directions
- Toss together quinoa, tomato, cucumber, green onion, and cranberries.
- Stir in Vegan Caesar Dressing (Recipe in Toppers)
- Serve over spinach
RECIPE NOTES
This recipe is for one serving. I recommend quadrupling the dressing so that it can be used for other recipes throughout the week.
