INGREDIENTS
- 5 Dates pitted
- 1/2 cup Almond butter
- 1 cup roasted pecan halves
- 1 green apple diced
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1 teaspoon orange zest (orange zest)
- 1 tablespoons Cooked garbanzo beans (canned is fine)
INSTRUCTIONS
- Place all the ingredients into a food processor.
- Pulse until the mixture comes together somewhat smoothly.
- Scoop about 2 tablespoons worth of mix and roll into balls.
- Chill for at least 1 hour and enjoy.
- Keep chilled for up to 1 week
RECIPE NOTES
With this recipe, you can also press the dough into a small square pan, freeze or refrigerate, and cut into squares/bars. If you're serving these vegan Apple Pecan Pie Bites as treats, they'll feed 8-10 people. If you're using them as a breakfast option, go ahead and divide it in four. It tastes like dessert for breakfast but these are a great way to start your day, with garbanzos, apple, and nuts. For breakfast, I recommend pairing this with sliced green apple or other fruit.
