INSTRUCTIONS

  1. Place all the ingredients into a food processor.
  2. Pulse until the mixture comes together somewhat smoothly.
  3. Scoop about 2 tablespoons worth of mix and roll into balls.
  4. Chill for at least 1 hour and enjoy.
  5. Keep chilled for up to 1 week


RECIPE NOTES

With this recipe, you can also press the dough into a small square pan, freeze or refrigerate, and cut into squares/bars.  If you're serving these vegan Apple Pecan Pie Bites as treats, they'll feed 8-10 people.  If you're using them as a breakfast option, go ahead and divide it in four.  It tastes like dessert for breakfast but these are a great way to start your day, with garbanzos, apple, and nuts.  For breakfast, I recommend pairing this with sliced green apple or other fruit.  Perfect for the holiday months!  This recipe was submitted by Chef Kari Rich of San Diego.
