Good things are happening this week. I’m so excited about my journey. I have been loving the food. I’m still sticking mostly to the jumpstart meal plans, but I’m starting to feel comfortable switching dinner nights & adding and subtracting ingredients to make them work more for me. You guys, I COULD NOT BELIEVE how much I loved the Tiffany’s Sweet & Spicy potato. I don’t even like sweet potatoes and just like that – they are a staple! I’m thrilled to have recipes like my instant pot black beans and some dressings & sauces that we love. I feel like getting these staples that make you excited about eating are half the battle when changing your style of eating. ETL for the win this week!
This week was a huge shift for me in terms of how I feel. I hit a magic number in my weight. Once I hit 130, I feel like a different person, I always have. Literally overnight.
I also noticed something on my Fitbit that I hadn’t paid much attention to before. My mom asked me what my resting heart rate usually is. Say wha? I dunno. Well, I looked, and I was SHOCKED at what I found. I have been doing drastically less activity since starting the jumpstart and low and behold – my resting heart rate dropped from a high of 70 bpm to 59 bpm today!!!
I’m getting HEALTHIER! We also both noticed that our skin has taken on a yellower/brighter tone. You can actually see it in my before and after’s this week!
I did a big thing the other day. I made my first meal plan for when the 6-week jumpstart is over. My mom and I have decided we are going to do a rotation of two breakfasts, two salads for lunches and three dinners per week. We are still going to prep. In fact, I ordered us a heavy-duty food processor & more salad storage containers toward our future efforts!
For dinners, I will probably be doing two tried-and-true and one new recipe, per week. I’m already starting to get together meals and ideas for our vacation at the end of May. It is SO IMPORTANT to me that we DO NOT let this vacation derail us, like it has done in the past. So, for the first week after the jumpstart – my new meal is going to be trying an ETL veggie burger recipe. I’m thinking…on a whole wheat pita, with homemade tofu-cashew mayo, pickled red cabbage, lettuce & onions. I’m so incredibly excited to be out on my own and make this my life : ).
This week I weighed in at 129.8. That’s 2.3 lbs for the week & a total of 15.5 since the jumpstart began! I don’t think I’ll reach my personal goal weight (120) during the jumpstart – but now I know I will. I hope everyone else had a great week! Happy journey, Friends!
