Hi!! My name is Catrina and I am a Mom to two amazing kiddos, military spouse and I run my own business from home. I became vegan about 5 years ago after my first son was born. he had eczema issues, and since he was exclusively nursing I knew of had to do with something I was eating. I started reading everything I could get my hands on, which led me to documentaries that showed me not only about how what we eat affects us, but also what happens behind the scenes and I decided to cut out any and all animal products.
One book I read that had the greatest impact was Dr Furhman’s Eat To Live. I followed his 6 week eating program and not only felt amazing, it helped my son’s eczema clear up and the baby weight I was struggling to lose melted off. Whoever said you lose weight nursing must have never been as hungry as I was- all the time! I did allow a bit more nuts and avocado than his plan called for, since I didn’t want to lose any milk production, but I never went hungry.
Sounds great and like I would stick with it right? Well, little by little I slowly started to eat more and more processed foods. Fast forward a couple years, and 18 months ago I had my daughter. I knew I could eat healthy and the weight hold melt off like it did before. The only problem with that, is that I never actually stuck to eating healthy. I did try ETL again for a couple weeks and lost 10 pounds, but eating healthy never stuck. I have a major sweet tooth, and feel like I can never say no to something sugary.
I’ve decided to try this 6 week challenge and put it all out there for everyone to read, because I feel like it will help force me to clean up my act, cut my sugar addiction, and make healthy food for myself and my family. I realize the worse I eat, the worse my kids eat and the pickier they become. It’s hard enough trying to steer them from all the junk food temptations they see other kids people eat.
I’m also hoping this will help me lose the baby weight I’m holding onto after my daughter. I have about 35 pounds I would like to lose, which would put me near my ideal weight according to Dr Fuhrman. I’d love to fit into my favorite jeans again, and even take myself shopping and splurge on some new clothes so I don’t feel like a frumpy Mom.
