It started off as a good week.  I was eating a smoothie for breakfast, had a salad for lunch.  Dinner varied: bean stew, stir fry, burritos.   Smoothies were usually kale, spinach and two fruits along with a half banana.  Yes, I varied the fruits on a daily basis.  Lunch was usually a salad.  I varied different flavors of vinegars.  One day I made a Mexican salad with black beans, corn.  I used jalapeno balsamic vinegar.  I love pomegranate vinegar or cranberry pear vinegars.  The variety of flavored vinegars has made eating salads a real pleasure.  I love my salads now.  Except…when it is really cold outside and I want something warm to eat.  Lo and behold bean stew/soup to the rescue.  Now this bean stew/soup is something else.  It has nine different kinds of beans and over ten vegetables.  I put more veggie broth or water in it when I want a soup and less when I want a stew.  Simple right?!  I vary the spices every time I make it.  I make a very large pot of it at the beginning of the week.  Between the smoothies, salads and stew, I always have something compliant to eat on a daily basis.  Doing this meal prep, keeps me compliant and also gives me the freedom to experiment with new recipes when I have the time.  

For example, this week I made oil free corn chips out of corn tortillas, varying the spices I put on them.  This has turned out great.  This really helps when I am craving chips and salsa, which is unfortunately, is frequently.  But oh, I am trying really hard to not snack in the evenings.  This is my most dangerous time.  Another trick I learned this week is to have cut up veggies in my ice box regularly.  I have a wonderful chopper, that chops veggies into diced, medium cubes and long rectangular pieces.  I find this very helpful  for making my salads, stir frys, stews and more.  I also make a big batch of rice as well.  I can add to the bean soup or stir frys.  

I was going along so well this week and then bam life hit me hard.  My fiancé and I had a blow up and he left to his old house to stay so he could work on getting it ready to sell.  I went completely back to my old eating habits of eating meat, junk food and continued eating until I was stuffed.  Yes, I definitely “comfort “ myself with food.  This time, unfortunately after the fact, I reached out to the group.  They gave me great support and love.  I realized a few things.  A) reach out BEFORE eating, B) I eat till I am stuffed so I don’t have to think about what is really bothering me, C) I really feel lousy after eating junk food, meat and processed food – like I am getting a cold/flu like symptoms .  That seems to be a pattern lately.  While I am very new at this Eat To Live way of eating, I have given up meat, dairy and some processed foods for the past six months and I really do feel better overall.  I just never lost any weight.  I am beginning to think that I can with the Eat To Live method, because I will be giving up salt, oil, sugar as well as snacking and eating until I am stuffed.  So thanks to everyone in this group, I am ready to continue to give a try.  I am learning a lot about myself and just how important meal prep is, and that it is ok to eat the same foods frequently while I learn how to add other compliant dishes at my own pace.

    Good job Peggy and way to work through the going off plan and getting right back on and reaching out for support. Food is so easy to reach for in stressful times and it’s hard to change that habit but now you have a plan! Love the vinegars on your salads and would love to find the jalapeno one! Keep up the good work!
