I’m so grateful for this opportunity and to be able to go on this journey with this group. It has definitely been a struggle! These last couple of weeks were particularly hard. I spent a lot of time working, having social events, and going out of town. I did not stick to the plan. I was good about breakfast and lunch. Those are easy because I am in that routine of smoothie for breakfast and salad/raw veggies with hummus at lunch. Dinner still proves to be tricky! I have a hard time saying no, especially when I’m busy and other things are more convenient.
Overall the six weeks has been a success! I am down 12 pounds! I have learned new recipes. This week I made a big batch of veggies with quinoa in a curry sauce that I have been eating for dinner. I’m still not 100%, but I am moving in the right direction and do not plan to quit even though the six weeks is over.
One of my biggest struggles has been the social aspect of dieting. I like to go on weekend trips and I frequently dine with my friends. Going forward, I am going to focus on finding a good balance when dining out. Being in a large city means there are plenty of vegan options at most restaurants and fully vegan restaurants! I’m hoping to explore those places instead of my usual brunch spots!
This is just the beginning! I am still dedicated to eat to live and I have joined a bootcamp fitness class! I am hoping doing the two at the same time will provide more motivation! Thanks for joining me on this journey!!! I hope to have positive updates soon!
