I can’t believe that it’s the end of our 6 week challenge!? It’s been an eye-opening couple of weeks for me.  I’ve learned that I can do what I thought I couldn’t and that’s do without oil and meat! If I can do it, any one of you can too! For this jumpstart I have kept to my usual average of 10-12 pound loss, and I lost 11 pounds.

 

This week I tried a few new recipes including Red Lentil Pizza Crust (shared in our support group face book page) and it was so good! It really was a treat to have pizza again! I also saw a “recipe” on the Nutritarian Women’s Study face book page that included baking 2 smashed bananas, 1 cup of oats and 1 cup of blueberries and some walnuts (I used ¼ cup chopped walnuts). After I cooked them, I individually bagged each of them and stuck them in the freezer for a quick on the go breakfast.  I microwave mine for about 45 seconds, but I’m sure if you prefer you could eat it cold. They were really yummy! And, I’m sure you could substitute a number of different fruit choices in place of the blueberries if you wanted to change this up a bit.

 

Something new I bought this week was an Instant Pot. (Yes, I’m probably one of the last few people to get one!) It is so awesome and has saved me so much time in the kitchen. I can whip out a bean soup in no time now! And this will allow me to have 3 or 4 to choose from during the week. I love it! I can’t wait to gather some recipes to try! Oh, and, we bought a small home gym! Not a big fancy one, but one to get the job done no less. With the weight I have lost, I can tell it’s time for some strength training to tighten and tone! So I’ll be adding some strength training to my routine for the next jumpstart!

 

So, here are my before and after pictures. Yikes, it’s hard to show these. In my before, I was also 300 pounds. I can’t believe I let myself get to that point. ☹ I’m so very thankful that I found the Eat to Live plan and community! I started at 293 and I am currently at 227. I still have some weight to go, but I’ll get there.  I absolutely love this way of eating and it is suiting me just fine. I feel so much better knowing that the foods and ingredients I am choosing are high quality and high nutrient and they are treating my body well! So many years I have abused and neglected my body and I’m so glad I’ve finally come to a place of self-love, to care about my body, and to really be intentional about what I am putting into it and doing to it.  I am so eager to learn all I can about this way of eating, and the benefits of all these wonderful foods we are eating.  There are so many resources for learning.  My favorite thing right now is to download a book from Audible and listen to one of the books by one of the top respected health experts while I do my walking.  I am so hungry for knowledge! And I love learning this way! Many people are now noticing that I’ve lost a good bit of weight and are curious as to what I’m doing. I want to be educated with how I respond so as not to turn them away, but to have them wanting to learn more. Recently, Elisha started a book club on the ETLD forum.  This is going to be a great way to educate ourselves with the “why” of the Eat to Live plan and I can’t wait to get started.

 

I would encourage you, if you are reading this and are feeling overwhelmed at fully committing to the plan, go for it!! Do it! You’ll be glad you did!! Being 100% really is much easier than worrying about what your 5-10% allowance will be.
